Paleo Shakshuka

Shakshuka had always been something I saw from afar, drooled over, and subsequently dreamed of, but I never actually tried it until recently. I’ve seen it quite a few times on different brunch menus, but it seems to always contain something I’m intolerant to when it’s made in a restaurant. They usually toss some bread or cheese or butter in there, so it’s not usually an option for me when eating out. I’m not sure what inspired the craving, but a few months ago I randomly started thinking about shakshuka and couldn’t stop. I guess that’s what happening to me now…

Paleo Carrot Cake Pancakes with Cashew “Cream Cheese” Frosting

I’ve been keeping this recipe safe in my back pocket for awhile now, slyly waiting for the perfect time to post it. Easter is coming up, my birthday is this week, and spring is in the air. It’s the perfect time.   Easter. Rabbits. Carrots. Carrot cake. I’ll never get over how strange it is that we associate certain foods with certain times of the year. That being said, I’m not complaining. There aren’t many healthy foods that I associate with Easter, when I think about it. It’s mostly just Peeps and chocolate eggs. And decorated, colored eggs, but I don’t eat those. This recipe, however, is…

Peppermint Vanilla Coconut Smoothie Bowl (Paleo)

HAPPY ST. PATRICK’S DAY, YOU LUCKY HUMAN! Are you wearing your green? I woke up this morning feeling like a CHAMP because I took the last test of my undergraduate career yesterday, so I wanted to make myself somethin’ festive to celebrate my good mood. Since I won’t be having corned beef and cabbage this year, I opted for something better – a peppermint smoothie bowl! Long gone are my high school days of living at McDonald’s to slurp down a Shamrock Shake every day after class in March. Even though I loved McDonald’s growing up (I really made a 180*…), if…

Chia “Rice” Pudding / Fake Oatmeal (Chai or Pumpkin Spice Flavor) (Paleo / Vegan)

Now that I’m on “the protocol,” I’m trying to switch up my breakfasts as much as I can to keep things interesting. I’ve learned the hard way that my body doesn’t like having the same foods every single day, so it’s important to rotate my meals. I’m also trying to figure out ways to make myself forget that I can’t have heaps of vegetables with every meal now. It’s a real struggle. The way this recipe was born is kind of weird. Also kind of funny. It all started with the name. My roommates and I were sitting around enjoying…

Paleo Eggplant Lasagna (w/ Vegan Option)

People always ask me what I miss most from my gluten days. The truth is, I don’t miss much. As hard as it is for some to believe, I can easily replace anything I miss. I truly believe you can make a healthier version of any dish, and magically, it tastes even better than the unhealthy version. Real food always tastes better. Take pasta, for example. I used to be a huuuuuge pasta girl. I think I ate pasta almost every single day of the first 18 years of my life. Italian food is divine. I realize now that it wasn’t…
